  • 3 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cinnamon
  • 1/4 cup honey Can be replaced with maple syrup for a vegan option.
  • 1/2 cup crumbled feta cheese Use a plant-based alternative for a vegan option.
  • to taste Fresh parsley for garnish Optional.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the sweet potatoes. Slice them into thin rounds, about 1/4 inch thick.
  • In a large bowl, combine the sweet potato rounds with olive oil, sea salt, black pepper, and ground cinnamon. Toss until all rounds are evenly coated.
  • Arrange the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.

Cooking

  • Roast the sweet potatoes in the preheated oven for about 25-30 minutes, flipping halfway through. They should be tender and slightly caramelized at the edges.
  • Once the rounds are done roasting, remove them from the oven and drizzle them with honey while they are still warm.
  • Sprinkle the crumbled feta cheese over the sweet potato rounds.
  • Garnish with chopped fresh parsley if desired.
