Ingredients
  

For the Roasted Sweet Potatoes

  • 2 large sweet potatoes Peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 to taste Salt and pepper

For the Tahini Butter Chickpeas

  • 1 can chickpeas 15 oz, drained and rinsed
  • 3 tablespoons tahini
  • 1 tablespoon maple syrup
  • 1 pinch Salt To taste
  • 1 to taste Water Adjust to achieve desired consistency

For Serving

  • 1 bunch Fresh herbs Such as parsley or cilantro for garnish
  • 2 wedges Lemon For serving

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  • Peel and cube the sweet potatoes into bite-sized pieces. Spread them on the prepared baking sheet.
  • In a large bowl, mix the olive oil, garlic powder, ground cumin, smoked paprika, salt, and pepper. Toss the sweet potato cubes in the spice mixture until well coated.

Cooking

  • Roast the sweet potatoes in the oven for about 25-30 minutes, or until they are tender and slightly caramelized. Stir halfway through for even cooking.
  • While the sweet potatoes are roasting, prepare the chickpeas. In a bowl, combine the tahini, maple syrup, a pinch of salt, and a little water to thin it out if necessary. Adjust the consistency to your liking.
  • In a separate skillet, add the drained chickpeas. Cook over medium heat until warmed through, about 5-7 minutes. Stir in a sprinkle of cumin and paprika for extra flavor.

Combining

  • Once the sweet potatoes are done, combine them with the warm chickpeas. Drizzle the tahini sauce over the top and gently toss to combine everything evenly.
  • Serve the dish warm, garnished with fresh herbs and lemon wedges on the side for added brightness.

Notes
