cherry tomatoes

fresh basil
(chopped)

fresh lemon juice
Instructions
Preheat your oven to 400°F (200°C). Slice the cherry tomatoes in half and place them in an oven-safe baking dish.
Drizzle the olive oil over the tomatoes, then add minced garlic, salt, oregano, and thyme. Stir gently to coat the tomatoes evenly.
Roast the tomatoes in the oven for about 30 minutes until they soften and develop a slight char.
While the tomatoes roast, cook your pasta according to package instructions. Drain well.
Remove the roasted tomatoes from the oven and add the cooked pasta to the baking dish along with chopped basil and lemon juice. Toss to combine.
Serve warm with grated parmesan cheese or a plant-based alternative, garnished with extra basil leaves.
