Roasted Tomato Pasta

Ingredients
  

  • 4 cups cherry tomatoes (about 2 pints)
  • 4 tablespoons olive oil
  • 8 cloves garlic (minced)
  • 1 teaspoon salt
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 8 ounces pasta (of your choice)
  • ¼ cup fresh basil (chopped)
  • 2 tablespoons fresh lemon juice

Instructions
 

  • Preheat your oven to 400°F (200°C). Slice the cherry tomatoes in half and place them in an oven-safe baking dish.
  • Drizzle the olive oil over the tomatoes, then add minced garlic, salt, oregano, and thyme. Stir gently to coat the tomatoes evenly.
  • Roast the tomatoes in the oven for about 30 minutes until they soften and develop a slight char.
  • While the tomatoes roast, cook your pasta according to package instructions. Drain well.
  • Remove the roasted tomatoes from the oven and add the cooked pasta to the baking dish along with chopped basil and lemon juice. Toss to combine.
  • Serve warm with grated parmesan cheese or a plant-based alternative, garnished with extra basil leaves.
