Heat a large skillet over medium-high heat. Add the ground beef and sprinkle with taco seasoning. Cook until browned, about 5-7 minutes, then drain excess grease.
Add the cubed Velveeta cheese to the skillet with the cooked beef. Pour in the Rotel and stir until the Velveeta begins to melt.
Continue stirring gently as the cheese melts, creating a smooth dip. Cook for another 5 minutes until everything is well combined and heated through.
Serve warm with tortilla chips or fresh veggies for dipping. Keep warm on low heat if desired.
