  • 8 cups chicken broth Use low-sodium if preferred
  • 2 cups egg noodles Can substitute with other noodle types

Vegetables and Aromatics

  • 1 medium onion, diced
  • 3 medium carrots, sliced
  • 2 stalks celery, sliced
  • 2 cloves garlic, minced

Seasonings

  • to taste Salt and pepper
  • for garnish Fresh parsley Adds freshness and color

Preparation

  • Heat a splash of oil in a large pot over medium heat.
  • Add the diced onion, sliced carrots, and sliced celery. Sauté for around five minutes until softened.
  • Incorporate the minced garlic and cook for an additional minute until fragrant.

Cooking

  • Pour in the chicken broth and bring it to a gentle boil.
  • Add the egg noodles and cook according to package instructions, usually about 6-8 minutes until al dente.
  • Stir in the shredded rotisserie chicken and season with salt and pepper to taste.
  • Let everything simmer for a few more minutes to meld the flavors together.

Serving

  • Ladle the soup into bowls and garnish with fresh parsley.
