Ingredients
  

For the cookies

  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup brown sugar, packed Use light or dark based on preference.
  • 1/2 cup granulated sugar
  • 1/2 cup honey A darker honey can enhance the flavor.
  • 2 large eggs
  • 3 cups all-purpose flour Measure accurately to avoid compacting.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped salted pistachios Consider toasting for extra flavor.
  • to taste flaky sea salt for topping Sprinkle on top before baking.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Add the honey and eggs to the mixture, and beat until fully combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the chopped pistachios gently.
  • Using a tablespoon, scoop out the cookie dough and place it onto the prepared baking sheets, spacing them about 2 inches apart.
  • Sprinkle a small pinch of flaky sea salt on top of each cookie.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until the edges turn golden.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For serving, arrange the cookies on a beautiful platter. They can be paired with tea or coffee, or served with ice cream for indulgence. Store in an airtight container for up to one week, or freeze for up to three months.
