Sausage and Sweet Potato Soup

Ingredients
  

Soup Base

  • 1 pound Sausage Use your preferred variety, spicy or mild.
  • 2 large Sweet potatoes, diced Diced into 1-inch pieces for even cooking.
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced Add more for a stronger flavor.
  • 4 cups Vegetable broth Can substitute with chicken broth if preferred.
  • 1 can Diced tomatoes (14.5 ounces) Include juice for added flavor.
  • 2 cups Kale or spinach Use fresh for the best texture.

Seasonings

  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano

Cooking Oil

  • 2 tablespoons Olive oil For sautéing.

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the sausage and cook until browned and fully cooked, breaking it apart with a spoon.
  • Once the sausage is done, add the chopped onion and garlic. Sauté until softened, about 3-4 minutes.
  • Stir in the diced sweet potatoes, dried thyme, and dried oregano. Cook for another 5 minutes, stirring occasionally.
  • Pour in the vegetable broth and add the can of diced tomatoes, including the juice. Bring everything to a boil.
  • Reduce the heat to a simmer and cover the pot. Let it cook for about 20-25 minutes, or until the sweet potatoes are tender.
  • Add the kale or spinach, stirring until wilted, about 3-5 minutes. Season with salt and pepper to taste.
  • Serve hot and enjoy.

Notes

Consider adding toppings like fresh herbs, grated cheese, or a dollop of sour cream for extra flavor. This soup is also excellent with crusty bread for dipping.
