Main Ingredients

  • 1 lb Italian sausage (sweet or spicy) Choose based on your spice preference.
  • 4 cups fresh kale (curly or Lacinato) Ensure kale is fresh for the best flavor.
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium chicken broth Use low-sodium for a healthier option.
  • 2 medium potatoes (diced)
  • 2 medium carrots (sliced)
  • to taste Salt
  • to taste Black pepper
  • to taste Crushed red pepper flakes Add more for extra spice.
  • to taste Thyme
  • optional Bay leaves Only if using.

Cooking Steps

  • Heat olive oil in a large pot over medium heat.
  • Add the Italian sausage, breaking it apart with a spatula. Brown for about 5 to 7 minutes.
  • Stir in the diced onion and minced garlic, sauté for another 3 to 4 minutes until the onions are translucent.
  • Add sliced carrots and diced potatoes, cooking for an additional 3 to 4 minutes.
  • Pour in the low-sodium chicken broth, season with salt, black pepper, crushed red pepper flakes, thyme, and bay leaves. Bring to boiling, then reduce heat and simmer for 20 minutes.
  • Stir in the fresh kale and let the soup simmer for another 10 minutes until the kale is tender.
  • Serve hot, garnished with extra black pepper and red pepper flakes, if desired.
