Ingredients
  

Pasta and Base Ingredients

  • 300 g pasta (your choice of shape, such as penne or fusilli) Cook according to package instructions
  • 1 tablespoon olive oil For sautéing

Main Ingredients

  • 400 g kielbasa sausage, sliced Can substitute with chicken or turkey sausage
  • 2 medium shallots, diced For flavor
  • 1 large red or green bell pepper, sliced Adds color and nutrition
  • 2 large garlic cloves, finely chopped For flavor
  • 1 teaspoon Italian seasoning mix Enhances flavor
  • 1/4 teaspoon red chili flakes Adjust for spice preference
  • 2 tablespoons tomato paste Thickens the sauce
  • 250 ml chicken stock Adds depth of flavor
  • 1 can (400 g) crushed tomatoes Base for the sauce
  • 100 g baby spinach Wilts into the sauce for freshness
  • 30 g Parmesan, grated For garnishing and flavor
  • Salt and pepper to taste To season the dish

Instructions
 

Cooking Pasta

  • Bring a large pot of salted water to a boil. Add the pasta and cook al dente according to package instructions (usually about 8-10 minutes). Reserve 1-2 cups of pasta water before draining.

Sautéing Ingredients

  • In a Dutch oven or large deep pan, heat the olive oil over medium heat. Add the sliced kielbasa and cook for about 3-4 minutes until slightly crispy. Remove the sausage and set aside.
  • In the same pot, add the diced shallots and bell pepper. Sauté for about 3-4 minutes until softened. Add the chopped garlic, Italian seasoning, and red chili flakes, cooking for about one minute.

Cooking Sauce

  • Stir in the tomato paste and cook for one minute. Then pour in the chicken stock and crushed tomatoes. Bring to a boil, then reduce to a simmer for about 10 minutes.
  • Add the baby spinach and cook for an additional 1-2 minutes until wilted. Return the cooked kielbasa to the pot and mix well.

Final Assembly

  • Add the drained pasta and mix to combine. If the sauce is too thick, add some reserved pasta water for desired consistency.
  • Stir in the grated Parmesan and season with salt and pepper as needed. Serve hot, garnished with extra Parmesan.
