Main Ingredients

  • 1 lb sausage (Italian or spicy) Choose based on flavor preference.
  • 4 pieces potatoes (diced, Yukon Gold or Russet)
  • 1 cup onion (chopped)
  • 3 cups chicken broth Can be substituted with vegetable broth.
  • 1 cup heavy cream Can be substituted with milk or non-dairy alternatives for a lighter version.
  • 2 cloves garlic (minced)
  • Salt and pepper To taste.
  • Optional: Chopped green onions for garnish

Preparation

  • Heat a large pot over medium heat.
  • Add the sausage to the pot and break it apart as it cooks. Sauté for about 5 to 7 minutes until browned.
  • Add the chopped onions and minced garlic. Cook for an additional 3 to 5 minutes until onions are translucent.
  • Add in the diced potatoes and pour in the chicken broth. Stir to coat the potatoes and bring to a boil.
  • Reduce heat and let it simmer for about 15 to 20 minutes until potatoes are tender.
  • Stir in the heavy cream, season with salt and pepper to taste, and garnish with green onions if desired.

Notes
