Ingredients
  

For the Dumpling Dough

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup warm water

For the Dumpling Filling

  • 1 pound ground chicken or tofu Substitute based on dietary preference.
  • 1 cup finely chopped cabbage
  • 2 pieces green onions, finely chopped
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste Salt and pepper

For the Soup

  • 6 cups chicken or vegetable broth
  • 2 cups sliced mushrooms
  • 1 cup baby spinach
  • Fresh cilantro for garnish Fresh cilantro
  • Chili flakes or sauce (optional) Chili flakes or sauce Add to taste.

Instructions
 

Dumpling Dough Preparation

  • In a mixing bowl, combine flour and salt.
  • Gradually add warm water, mixing until a dough forms.
  • Knead the dough on a floured surface for about 5-6 minutes until smooth.
  • Cover it with a damp cloth and let it rest for 30 minutes.

Dumpling Filling Preparation

  • In a bowl, mix ground chicken (or tofu), chopped cabbage, green onions, ginger, garlic, soy sauce, sesame oil, and a pinch of salt and pepper.
  • Combine until well blended.

Dumpling Assembly

  • Roll out the rested dough into a thin sheet and cut it into circles using a cookie cutter or glass.
  • Fill each circle with about a teaspoon of the filling.
  • Carefully fold the dough over the filling and pinch the edges to seal, ensuring there are no holes.

Soup Preparation

  • Heat a large pot over medium heat.
  • Add the broth and bring it to a gentle simmer.
  • Stir in the sliced mushrooms and simmer for about 5 minutes until they soften.
  • Add the dumplings to the simmering broth and cook for 8-10 minutes until they float to the surface.
  • Stir in the baby spinach and cook for an additional 2-3 minutes until wilted.
  • Taste the broth and adjust seasoning if necessary.

Serving

  • Serve the soup hot, garnished with fresh cilantro and chili flakes or sauce if desired.
