Ingredients
  

For the Stew

  • 2 lbs chicken thighs, skinless and boneless Substitute chicken breast if preferred.
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes with juice
  • 2 cups chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • 1 bay leaf
  • for garnish Fresh parsley

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium-high heat.
  • Add the diced onions and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Place the chicken thighs into the pot, seasoning with salt and pepper. Brown the chicken on all sides for about 7-10 minutes.
  • Incorporate the carrots, potatoes, and bell pepper into the pot. Stir well to combine all ingredients.

Cooking

  • Pour in the diced tomatoes, followed by the chicken broth and tomato paste. Mix well to ensure everything is evenly distributed.
  • Sprinkle the dried thyme and oregano into the pot, and add the bay leaf.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 45 minutes.
  • Check for seasoning and adjust as necessary. Remove the bay leaf before serving.
  • Gradually stir in fresh parsley for extra flavor if desired.

Notes
