Instructions
Mash the ripe banana in a bowl until smooth.
Mix the mashed banana with the egg, rolled oats, and cinnamon in a bowl until combined.
Let the mixture sit for a few minutes to allow the oats to soak up moisture.
Heat olive oil in a skillet over medium heat.
Pour the oat mixture into the skillet and spread it evenly.
Cook until the mixture firms up, about 1 minute. Then, scramble until golden brown, breaking it into chunks.
Transfer to a plate and let cool slightly before serving.
