Ingredients
  

  • 1 small ripe banana (approx. 2.5 oz)
  • 1 large egg
  • 1/3 cup rolled oats
  • Cinnamon to taste
  • 3 tbsp Greek yogurt
  • 1 tsp olive oil (for coating the pan)

Instructions
 

  • Mash the ripe banana in a bowl until smooth.
  • Mix the mashed banana with the egg, rolled oats, and cinnamon in a bowl until combined.
  • Let the mixture sit for a few minutes to allow the oats to soak up moisture.
  • Heat olive oil in a skillet over medium heat.
  • Pour the oat mixture into the skillet and spread it evenly.
  • Cook until the mixture firms up, about 1 minute. Then, scramble until golden brown, breaking it into chunks.
  • Transfer to a plate and let cool slightly before serving.
