Ingredients
  

  • 1 pound mixed seafood (shrimp, scallops, mussels, calamari)
  • 1/4 cup olive oil
  • 1 medium onion, diced
  • 2 tsp red chili flakes
  • 1/4 tsp sea salt
  • 4 cloves garlic, diced
  • 2 pounds fresh tomatoes (diced) or 28 oz can of diced or crushed tomatoes
  • 1 cup water
  • 1 tsp dried oregano
  • 1/2 pound spaghetti

Instructions
 

  • Heat olive oil in a large, shallow pan over medium heat. Add diced onion, red chili flakes, and sea salt. Cook until onions turn golden brown, about 5 minutes.
  • Add diced garlic and cook for an additional minute until fragrant.
  • Incorporate diced tomatoes, water, and dried oregano. Increase heat to medium-high and bring to a simmer, cooking for 20-25 minutes until sauce thickens.
  • In a separate pot, bring salted water to a boil. Add mixed seafood and cook for 2 minutes until shrimp turns pink. Remove seafood and rinse with cold water.
  • In the same pot, cook spaghetti according to package directions, typically about 8-10 minutes.
  • Drain spaghetti and combine with the thickened sauce, tossing well to coat.
  • Gently add the cooked seafood into the spaghetti mixture and toss to combine. Serve immediately.
