Ingredients
  

  • 1 lb Sausage any type of smoked sausage or bratwurst
  • 2 lb Sweet Potatoes can substitute with butternut squash
  • 0.25 cup Honey can swap with maple syrup
  • 4 cloves Garlic minced; garlic powder can be a substitute
  • 2 tablespoons Olive Oil any neutral oil can be used
  • 0.25 cup Fresh Parsley for garnish
  • 1 bowl Green Salad to serve alongside for a balanced meal

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Peel and cube the sweet potatoes into bite-sized pieces and toss them with olive oil, salt, pepper, and minced garlic in a large bowl.
  • Slice the sausage into bite-sized pieces and add to the bowl, mixing well.
  • Spread the sweet potatoes and sausage on a large sheet pan in a single layer.
  • In a small bowl, whisk together honey and a pinch of salt, then drizzle over the sausage and sweet potatoes.
  • Roast in the preheated oven for 25-30 minutes, stirring halfway through for even cooking.
  • Once roasted, remove from the oven and drizzle with a little more honey if desired. Garnish with fresh parsley before serving.

Notes
