Instructions
Preheat your oven to 400°F (200°C).
Peel and cube the sweet potatoes into bite-sized pieces and toss them with olive oil, salt, pepper, and minced garlic in a large bowl.
Slice the sausage into bite-sized pieces and add to the bowl, mixing well.
Spread the sweet potatoes and sausage on a large sheet pan in a single layer.
In a small bowl, whisk together honey and a pinch of salt, then drizzle over the sausage and sweet potatoes.
Roast in the preheated oven for 25-30 minutes, stirring halfway through for even cooking.
Once roasted, remove from the oven and drizzle with a little more honey if desired. Garnish with fresh parsley before serving.
