  • 2 lbs boneless, skinless chicken breasts
  • 1/2 cup fresh lime juice Freshly squeezed is recommended
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped Add at the end for freshness

Preparation

  • Pour the fresh lime juice into the bottom of the slow cooker.
  • Add the chicken broth over the lime juice.
  • Drizzle the olive oil over the mixture.
  • Stir in the minced garlic, ground cumin, chili powder, salt, and pepper.
  • Place the chicken breasts in the slow cooker, ensuring they are submerged.

Cooking

  • Cover the slow cooker and cook on low for 6 to 8 hours or high for 3 to 4 hours.
  • Once cooked, shred the chicken using two forks or transfer to a cutting board to shred.
  • Stir in chopped cilantro before serving.
