Ingredients
  

Pasta and Shrimp

  • 1 pound elbows or other short pasta, cooked and drained
  • 12 ounces shrimp, peeled Use fresh or properly thawed frozen shrimp.

Cheese Sauce

  • 5 tablespoons unsalted butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 small hot green chili (serrano), minced (optional) For added heat.
  • 5 tablespoons all-purpose flour
  • 2 cups cream
  • 2 cups shredded Gruyere cheese, loosely packed
  • 1.5 cups shredded cheddar, loosely packed
  • 0.5 cup grated pecorino or Parmesan cheese
  • Salt and black pepper, to taste

Topping

  • 0.5 cup breadcrumbs
  • 4 tablespoons fresh parsley, chopped For garnish.

Instructions
 

Preparation

  • Heat the unsalted butter in a large pan over medium-high heat until melted and bubbling.
  • Add the chopped onion and sauté for about 4 minutes until soft and translucent.
  • If desired, add the minced hot chili and garlic, stirring for another minute.
  • Sprinkle the all-purpose flour into the pan, mixing it well with the butter and onion. Cook for about 5 minutes until it turns light golden brown.
  • Gradually pour in the cream, adding about half a cup at a time while mixing thoroughly after each addition.
  • Add the Gruyere cheese first, mixing well, followed by the cheddar and pecorino/Parmesan, allowing each to melt into the sauce.
  • Season the sauce with salt and black pepper to taste.
  • Gently fold in the cooked pasta and shrimp, ensuring everything is well coated with the cheese sauce.

Baking

  • Transfer the mixture into a greased casserole dish, and spread it evenly.
  • Sprinkle breadcrumbs and fresh parsley on top.
  • Preheat the oven to 350°F and bake uncovered for 15 to 20 minutes until the top is golden brown and crispy.
  • Let it sit for about 5 minutes before serving.

Notes
