Ingredients
  

Main ingredients

  • 8 ounces rice noodles Soaked in warm water for 20-30 minutes.
  • 2 tablespoons vegetable oil For cooking.
  • 1 pound fresh shrimp, peeled and deveined Cooked until pink.
  • 2 cloves garlic, minced For flavor.
  • 2 eggs lightly beaten Scrambled in the skillet.
  • 1 cup bean sprouts Added for crunch.
  • ½ cup green onions, chopped To be added during stir-fry.
  • ¼ cup crushed peanuts For topping.
  • 1 unit lime, cut into wedges Served on the side.
  • Fresh unit cilantro, for garnish To enhance presentation.

For the sauce

  • 3 tablespoons fish sauce Provides umami flavor.
  • 1 tablespoon soy sauce For seasoning.
  • 2 tablespoons sugar To balance flavors.
  • 1 tablespoon tamarind paste Adds tanginess.
  • 1 teaspoon chili powder Adjust to taste for spice.

Instructions
 

Preparation

  • Soak the rice noodles in warm water for about 20-30 minutes, or until they become soft. Drain and set aside.
  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  • Add the shrimp to the skillet and cook for about 3-4 minutes, or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
  • In the same skillet, push the garlic to one side and add the beaten eggs. Scramble the eggs until fully cooked, then mix with the garlic.

Cooking

  • Stir in the soaked noodles, cooked shrimp, and all the sauce ingredients. Toss everything together to ensure the noodles are coated well.
  • After about 2-3 minutes, add the bean sprouts and green onions. Stir-fry for another minute until the veggies are slightly tender but still crunchy.
  • Remove from heat and transfer to a serving dish. Top with crushed peanuts and cilantro.

Notes

Serve hot with lime wedges on the side for added zest. Offer additional toppings such as crushed peanuts and chili flakes for customization.
