Ingredients
  

For the Rice

  • 2 cups sushi rice Use short-grain sushi rice for best results.
  • 2.5 cups water For cooking the sushi rice.
  • 1/4 cup rice vinegar Adds flavor to the sushi rice.
  • 2 tablespoons sugar Balances the acidity of the vinegar.
  • 1 teaspoon salt For seasoning the rice.

For the Bowl

  • 1 pound shrimp, peeled and deveined Fresh shrimp are recommended for best flavor.
  • 1 avocado sliced Adds creaminess to the bowl.
  • 1 cucumber thinly sliced Adds freshness and crunch.
  • 1 carrot julienned Provides color and texture.
  • 1 radish thinly sliced Adds a peppery flavor.
  • 2 green onions chopped For garnish and added flavor.
  • Sesame seeds for garnish
  • Nori sheets, cut into strips For added flavor and texture.
  • Soy sauce for serving Common accompaniment for sushi.
  • Pickled ginger for serving Enhances the sushi experience.

Instructions
 

Prepare the Rice

  • Rinse the sushi rice under cold water until the water runs clear to remove excess starch.
  • Combine the rinsed rice and water in a rice cooker or pot. If using a pot, bring the water to a boil, cover, reduce to low heat, and cook for about 20 minutes or until water is absorbed.
  • Once done, remove from heat and let it sit for 10 minutes, covered.

Season the Rice

  • In a small saucepan, mix rice vinegar, sugar, and salt over low heat until the sugar dissolves.
  • Pour this mixture into the cooked rice and gently fold it in, being careful not to mash the grains.

Cook the Shrimp

  • Heat a skillet over medium-high heat and add a splash of oil.
  • Cook the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and let them cool slightly.

Assemble the Bowls

  • Start with a base of sushi rice in each bowl, followed by a few shrimp on top.
  • Arrange the avocado, cucumber, carrot, and radish around the shrimp.
  • Sprinkle sesame seeds and green onions over each bowl.
  • Add nori strips for added flavor and texture.
  • Serve the bowls with soy sauce and pickled ginger on the side.
