Ingredients
  

For the Chicken and Broth

  • 1 whole rotisserie chicken (white and dark meat shredded, skin removed) Use a high-quality rotisserie chicken for best flavor.
  • 12 oz frozen mirepoix blend (celery, carrots, and onion) This adds flavor and saves prep time.
  • 1/4 cup fresh parsley (finely chopped) For garnish and added freshness.
  • 2 tablespoons unsalted butter Used for sautéing.
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups chicken broth For a rich flavor.
  • 1 can cream of chicken soup

For the Dumplings

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup whole milk To combine with melted butter.
  • 4 tablespoons unsalted butter (melted) For the dumpling dough.

Instructions
 

Preparation

  • Melt 2 tablespoons of unsalted butter in a large stockpot over medium-high heat.
  • Add the frozen mirepoix blend and chopped parsley. Sprinkle in the Italian seasoning, garlic powder, smoked paprika, dried thyme, salt, and black pepper.
  • Sauté for about 3 to 4 minutes, ensuring everything is well combined and fragrant.

Cooking the Soup

  • Stir in the cream of chicken soup and chicken broth until smooth.
  • Add the shredded rotisserie chicken into the pot and bring the mixture to a low boil.
  • Reduce heat and let it simmer to develop a rich flavor.

Making the Dumplings

  • In a separate bowl, combine 2 cups of all-purpose flour, 4 teaspoons of baking powder, and 1 teaspoon of salt.
  • In another bowl, mix the milk and melted butter together.
  • Combine the wet and dry ingredients to form a dough, ensuring not to overmix.

Cooking the Dumplings

  • Drop spoonfuls of the dumpling dough into the simmering stew.
  • Cover the pot and allow the dumplings to cook without lifting the lid for about 25 minutes.

Serving

  • Ladle the Chicken and Dumplings into bowls and garnish with fresh parsley before serving.
