Ingredients
  

  • 2 lbs beef chuck roast
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 Tbsp Worcestershire sauce
  • to taste salt and pepper
  • for garnish fresh herbs (optional, like thyme or rosemary)

Instructions
 

  • Season the beef chuck roast generously with salt and pepper, rubbing it well into the surface.
  • Place the seasoned roast in the slow cooker.
  • Scatter chopped onion and minced garlic over the beef.
  • Pour in the beef broth and Worcestershire sauce.
  • Add sliced carrots and diced potatoes around the beef.
  • Cover and cook on LOW for about 8 hours.
  • Check the beef for tenderness; it should be fork-tender and easy to shred.
  • Shred the beef in the slow cooker using two forks, mixing it with the gravy and vegetables.
  • Serve warm, garnished with fresh herbs if desired.
