Instructions
Season the beef chuck roast generously with salt and pepper, rubbing it well into the surface.
Place the seasoned roast in the slow cooker.
Scatter chopped onion and minced garlic over the beef.
Pour in the beef broth and Worcestershire sauce.
Add sliced carrots and diced potatoes around the beef.
Cover and cook on LOW for about 8 hours.
Check the beef for tenderness; it should be fork-tender and easy to shred.
Shred the beef in the slow cooker using two forks, mixing it with the gravy and vegetables.
Serve warm, garnished with fresh herbs if desired.
