Ingredients
  

  • 1.5 lbs flank steak or sirloin thinly sliced against the grain
  • 2 cups broccoli florets steamed or microwaved separately
  • 3/4 cup low-sodium beef broth
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup brown sugar
  • 1 tbsp sesame oil
  • 1 tbsp minced garlic
  • 1 tsp ground ginger
  • 2 tbsp cornstarch for thickening

Instructions
 

  • Slice the beef thinly against the grain to ensure tenderness after slow cooking.
  • In a small bowl, mix the soy sauce, brown sugar, garlic, ginger, sesame oil, and beef broth. Stir until sugar is dissolved.
  • Place the beef into the slow cooker and pour the sauce over it. Stir well to ensure all slices are coated.
  • Cover and cook on low for 5 to 6 hours until the beef is tender and fully infused with the sauce.
  • In the last 30 minutes, mix cornstarch with a few tablespoons of cold water. Stir this slurry into the slow cooker to thicken the sauce.
  • Steam the broccoli separately and stir it into the slow cooker for about 5 minutes before serving to keep it vibrant and crisp.

Notes

Feel free to add a spicy kick with chili flakes or sriracha, or adjust the sweetness by lowering the sugar. You can even freeze leftovers for easy meals later!
