  • 4 pieces carrots, sliced
  • 4 pieces potatoes, diced
  • 1 piece onion, chopped
  • 2-3 cloves garlic, minced

Broth and Seasoning

  • 4 cups beef broth Essential for the stew's savory depth.
  • 2 tablespoons tomato paste Enhances flavor further.
  • 1 teaspoon dried thyme
  • 1 teaspoon salt Adjust as necessary.
  • 1/2 teaspoon black pepper Adjust to preferred spice level.
  • 1 leaf bay leaf Remove before serving.

  • 2 tablespoons olive oil Use for browning the meat.

Preparation and Browning

  • Heat olive oil in a skillet over medium heat.
  • Brown the stew meat on all sides for 5-7 minutes, then transfer to the slow cooker.

Assemble the Stew

  • Add sliced carrots, diced potatoes, chopped onion, and minced garlic to the slow cooker.
  • Stir gently to combine the vegetables.
  • Pour in beef broth and add tomato paste, dried thyme, salt, black pepper, and bay leaf.

Cooking

  • Cover and cook on low for about 8 hours or on high for 4 hours.
  • Check for tenderness; the meat and vegetables should be fork-tender.
  • Before serving, remove the bay leaf.

Serving

  • Ladle portions into deep bowls and garnish with fresh herbs if desired.
  • Serve with crusty bread, rice, or mashed potatoes.
