Beef and Sauce Ingredients

  • 2 lbs beef chuck roast Ideal for shredding due to its marbling.
  • 4 cups beef broth For simmering the peppers.
  • 3 pieces dried guajillo peppers Remove stems and seeds before use.
  • 2 pieces dried ancho peppers Remove stems and seeds before use.
  • 1 medium onion, chopped Adds flavor to the sauce.
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar Balances flavors in the sauce.
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • to taste none salt and pepper Adjust according to preference.

Taco Assembly Ingredients

  • 12 pieces corn tortillas Warm before serving.
  • to taste none chopped onions and cilantro for garnish Add for freshness.

Instructions
 

Preparation

  • Start by removing the stems and seeds from the dried guajillo and ancho peppers. Place them in a saucepan along with the beef broth. Allow the mixture to simmer for about 15-20 minutes.
  • After the peppers have softened, transfer them to a blender, including the broth from the saucepan. Add the chopped onion, minced garlic, apple cider vinegar, ground cumin, dried oregano, smoked paprika, salt, and pepper. Blend everything until smooth.

Cooking

  • Place the beef chuck roast into your slow cooker. Pour the smooth pepper sauce over the beef, ensuring it's well-coated.
  • Set your slow cooker to low and cook for about eight hours.
  • Once the cooking time is up, use two forks to shred the meat in the slow cooker and mix it with the sauce.

Assembly

  • Warm the corn tortillas in a skillet over medium heat.
  • Fill each tortilla with a generous helping of the shredded beef and top with chopped onions and cilantro.
  • Serve with reserved broth for dipping if desired.

Notes

Consider marinating the beef overnight in the blended sauce for deeper flavors. Keep tacos warm in a low oven wrapped in foil if serving a crowd.
