  • 2 pounds chicken breasts Boneless and skinless are recommended for even cooking.
  • 1 cup chicken broth
  • 2 tablespoons olive oil For searing the chicken.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • Fresh parsley for garnish (optional)

Preparation

  • Prepare your slow cooker by spraying the inner pot with non-stick cooking spray or lightly coat it with olive oil.
  • In a small bowl, mix garlic powder, onion powder, dried oregano, paprika, salt, and pepper to create a seasoning blend.
  • Pat the chicken breasts dry with paper towels and rub the seasoning mixture evenly all over the chicken.

Cooking

  • Heat olive oil in a skillet over medium-high heat and sear the seasoned chicken breasts for about 3-4 minutes on each side until golden brown.
  • Transfer the seared chicken breasts to the slow cooker and pour chicken broth over the top, ensuring they're partly submerged.
  • Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  • Check that chicken reaches an internal temperature of 165°F upon cooking. Let it rest for a few minutes before slicing or shredding.
  • Serve with cooking juices drizzled over the chicken for added flavor.

Notes
