  • 4 chicken thighs Bone-in, skin-on recommended for flavor
  • 1 cup chicken broth Substitute with vegetable broth or water if needed
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil For browning the chicken

Preparation

  • Season the chicken thighs with salt, pepper, paprika, and dried thyme, coating them evenly.
  • In a skillet, heat olive oil over medium heat and brown the chicken thighs for 3 to 4 minutes on each side.

Cooking

  • Transfer the browned chicken thighs to the slow cooker.
  • Add sliced onions and minced garlic on top of the chicken.
  • Pour in the chicken broth.
  • Cover and slow cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender.
  • Check for doneness; the chicken should easily pull apart with a fork.
