  • 2 pounds boneless, skinless chicken thighs Ideal for tenderness and flavor.
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon freshly grated ginger

Spices

  • 2 tablespoons garam masala Key spice for flavor.
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder Adjust to taste.

Saucy Components

  • 1 can diced tomatoes (14 oz)
  • 1 cup coconut milk or heavy cream Use according to preference.
  • 2 tablespoons tomato paste
  • to taste Salt and pepper
  • for garnish Fresh cilantro Adds freshness and color.

Instructions
 

Preparation

  • Trim any excess fat from the chicken thighs and cut them into bite-sized pieces.
  • Place the chicken pieces into the slow cooker.
  • Add chopped onion, minced garlic, and freshly grated ginger.

Spicing

  • Sprinkle garam masala, ground coriander, ground cumin, turmeric, and chili powder over the chicken.
  • Stir well to coat the chicken and evenly distribute the spices.

Cooking

  • Pour in diced tomatoes, coconut milk (or heavy cream), and tomato paste.
  • Season with salt and pepper to taste and stir to blend all ingredients.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Check chicken for tenderness; it should shred easily with a fork.
  • Taste and adjust seasoning before serving; garnish with fresh cilantro.
