For the Chicken

  • 2 cups yellow onion, diced Provides a flavorful base.
  • 3 cloves garlic, minced Enhances flavor.
  • 2 lbs boneless, skinless chicken breasts Main protein.
  • ½ cup diced chipotle peppers in adobo sauce Provides smoky and spicy flavor.
  • ½ cup red salsa Preferably fire-roasted for added flavor.
  • 2 tablespoons honey Balances spiciness with sweetness.
  • 1 teaspoon smoked paprika Adds depth of flavor.
  • 1 teaspoon ground cumin Enhances the Mexican flavor profile.
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

Preparation

  • Prepare your slow cooker by placing the diced onions and minced garlic at the bottom.
  • Lay the chicken breasts evenly over the onion and garlic mixture.
  • In a separate bowl, whisk together the diced chipotle peppers, red salsa, honey, smoked paprika, ground cumin, dried oregano, salt, black pepper, and lime juice until blended.
  • Pour the sauce over the chicken, ensuring it coats all the pieces.

Cooking

  • Cover the slow cooker and set it to cook on high for 3 to 4 hours or low for 5 to 6 hours.
  • Flip the chicken or spoon sauce over it every 1 to 2 hours for even cooking.
  • Check for doneness; the chicken should be tender and shreddable.
  • Shred the chicken using two forks and stir it back into the sauce.
  • Allow it to sit on 'warm' setting for 10 to 15 minutes before serving.
