  • 2 cups pineapple juice

  • 3/4 cup ketchup
  • 1 tablespoon soy sauce
  • 4 cloves garlic, minced
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground ginger

Preparation

  • Whisk together the pineapple juice, brown sugar, ketchup, soy sauce, minced garlic, Worcestershire sauce, salt, pepper, onion powder, and ground ginger in a mixing bowl to create the sauce.
  • In a skillet over medium heat, melt the butter. Add the chopped onions and sauté until they turn golden brown, about 5 minutes.
  • Stir in the flour and cook for an additional minute, stirring constantly to prevent burning.
  • Pour the pineapple juice mixture into the skillet, bring to a boil, then reduce heat and simmer for about 10-15 minutes until the sauce thickens.
  • Place the boneless chicken breasts into the slow cooker and pour the thickened sauce over them, ensuring they are fully coated.

Cooking

  • Cover the slow cooker and set it to low heat. Cook for approximately 8 hours, or until the chicken is tender and easily shredded with a fork.
  • Once cooking is complete, remove the chicken, shred it in the slow cooker, and mix it into the sauce.
