Main Ingredients

  • 2 lbs boneless, skinless chicken thighs Thighs stay juicy during cooking.
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 medium red bell pepper, chopped
  • 1 cup snap peas
  • 1/2 medium onion, sliced

Sauce Ingredients

  • 1/4 cup honey
  • 1/4 cup soy sauce Can substitute with tamari for gluten-free.
  • 4 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger
  • Salt and pepper, to taste

Optional Garnishes and Serving

  • Cooked rice for serving Optional.
  • Sesame seeds for garnish Optional.
  • Green onions for garnish Optional.

Instructions
 

Preparation

  • Place the chicken thighs at the bottom of the slow cooker.
  • In a bowl, mix together honey, soy sauce, minced garlic, sesame oil, ground ginger, salt, and pepper. Whisk until well combined.
  • Pour the sauce over the chicken thighs.
  • Add the broccoli florets, sliced carrots, chopped red bell pepper, snap peas, and onion on top of the chicken.
  • Gently stir to coat the vegetables in the sauce, ensuring everything is mixed well.

Cooking

  • Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours, or until chicken is tender and fully cooked.
  • Once cooked, shred the chicken inside the slow cooker using two forks and mix everything well to combine the flavors.

Serving

  • Serve the honey garlic chicken and veggies over cooked rice, if desired.
  • Garnish with sesame seeds and sliced green onions before serving.

Notes

For a thicker sauce, mix in a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water) during the last 30 minutes of cooking. Allows for various vegetables based on preference.
