  • 4 pieces boneless, skinless chicken breasts
  • 1 pound baby red potatoes, halved or quartered if large
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 2 tablespoons olive oil For greasing the slow cooker
  • 1/2 cup chicken broth
  • 2 tablespoons chopped fresh parsley for garnish (optional) Adds color and freshness

Instructions
 

Preparation

  • Wash and dry the chicken breasts thoroughly.
  • In a bowl, combine the Parmesan cheese, minced garlic, salt, black pepper, and Italian seasoning.
  • Coat each chicken breast with the cheese mixture, ensuring even coverage.

Cooking

  • Pour olive oil into the bottom of the slow cooker.
  • Place the seasoned chicken breasts in the slow cooker and arrange halved red potatoes around them.
  • Pour the chicken broth over the chicken and potatoes.
  • Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • Once cooked, check the chicken's internal temperature is at least 165°F and that the potatoes are fork-tender.
  • Serve warm on a platter and garnish with fresh parsley if desired.
