  • 1 lb ground beef Choose ground beef with a bit of fat for richer flavor.
  • 4 medium potatoes, diced Use your favorite type of potatoes.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth This will serve as the base for your soup.
  • 1 cup heavy cream Adds creamy texture to the soup.
  • 1 tsp salt Adjust according to taste.
  • 1 tsp black pepper Adjust according to taste.
  • 2 tsp dried thyme
  • 1 cup carrots, chopped
  • 1 cup celery, chopped

Preparation

  • Brown the ground beef in a skillet over medium heat until no longer pink. Drain any excess fat.
  • Transfer the browned beef to a slow cooker and combine with diced potatoes, chopped onion, minced garlic, chopped carrots, and chopped celery.
  • Pour in enough beef broth to fully submerge the ingredients.
  • Season with salt, black pepper, and dried thyme, and stir gently to combine.

Cooking

  • Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, add the heavy cream and stir to incorporate.
  • Adjust seasoning with salt or pepper if needed.

Serving

  • Serve hot, garnished with fresh herbs like parsley or chives if desired.
  • Accompany with a slice of crusty bread.
