Slow Cooker Stuffed Bell Peppers

Hearty bell peppers filled with ground meat, rice, and spices, all slow-cooked to perfection for a satisfying family meal.

Ingredients
  

  • 4 large bell peppers (any color)
  • 1 lb ground meat (beef, turkey, or chicken)
  • 1 cup cooked rice (brown or white)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce (plus more if desired)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbsp Italian seasoning
  • 1 cup cheese (optional)

Instructions
 

  • Cut off the tops of each bell pepper and remove the seeds.
  • In a large mixing bowl, combine ground meat, cooked rice, onion, garlic, tomato sauce, salt, pepper, and Italian seasoning.
  • Stuff each bell pepper with the meat mixture, packing it slightly.
  • Place the stuffed peppers upright in the slow cooker. Pour additional tomato sauce over the top if desired.
  • Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
  • About 30 minutes before serving, sprinkle cheese on top if desired. Cover and allow to melt.
  • Serve warm, garnished as desired.
