Main Ingredients

  • 1 lb Italian sausage Use quality Italian sausage for deeper flavor.
  • 4 cups chicken broth Ensure it's gluten-free if necessary.
  • 2 cups chopped fresh kale Kale can be substituted with spinach or Swiss chard.
  • 2 large potatoes, diced Waxy potatoes like Yukon Gold are recommended for creaminess.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • to taste Salt and pepper

Instructions
 

Preparation

  • Brown the Italian sausage in a skillet over medium heat until fragrant.
  • Transfer the browned sausage to your slow cooker.
  • Add the chicken broth, chopped kale, diced potatoes, chopped onion, and minced garlic to the slow cooker.

Cooking

  • Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, stir in the heavy cream and adjust seasoning with salt and pepper.
  • Allow the soup to heat through before serving.

Serving

  • Ladle the soup into bowls and optionally sprinkle with fresh chopped kale or black pepper.
  • Serve with grated Parmesan cheese and warm, crusty bread.

Notes

Allow cooled soup to be stored in airtight containers for up to 3 days in the refrigerator, or freeze for 2-3 months. Thaw and reheat before serving.
