Ingredients
  

For the Soup

  • 1 lb Italian sausage Browning enhances the flavor
  • 1 large onion, diced Provides foundational flavor
  • 3 cloves garlic, minced Add depth to the broth
  • 4 cups chicken broth Rich base for the soup
  • 4 large potatoes, diced Add heartiness to the dish
  • 2 cups kale or spinach, chopped For nutrition and color
  • 1 cup heavy cream For a creamy finish
  • to taste Salt and pepper Season to preference
  • optional Red pepper flakes For added heat

Preparation

  • Brown the Italian sausage in a large skillet over medium heat for about 5-7 minutes. Drain excess fat.
  • Transfer the browned sausage to the slow cooker.
  • Add diced onion and minced garlic to the slow cooker.
  • Pour in the chicken broth to cover the ingredients.
  • Add the diced potatoes and stir gently to combine.

Cooking

  • Cover and set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, add the chopped kale or spinach and heavy cream; stir well.
  • Season with salt, pepper, and red pepper flakes.

Serving

  • Ladle into bowls and serve hot, optionally garnished with Parmesan cheese and fresh herbs.

Notes

For a lighter soup, reduce the heavy cream or substitute with more broth. Leftovers can be stored in an airtight container for 3-4 days in the refrigerator or frozen for 2-3 months.
