  • 2 large chicken breasts Use high-quality, fresh chicken.
  • 1 tablespoon olive oil Helps seasoning stick.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Wood chips (hickory, applewood, or cherry) Choose based on desired flavor.

Preparation

  • Prepare your smoker according to the manufacturer's instructions and preheat it to 225°F (107°C).
  • Rinse the chicken breasts under cold water and pat them dry.
  • Rub olive oil over the chicken breasts.
  • Mix salt, black pepper, garlic powder, onion powder, paprika, and thyme in a small bowl.
  • Generously sprinkle the seasoning over both sides of the chicken breasts.
  • Soak the wood chips in water for about 30 minutes, then drain and place them in the smoker.

Cooking

  • Place the seasoned chicken breasts in the smoker and close the lid.
  • Smoke for about 2-3 hours or until the internal temperature reaches 165°F (74°C).
  • Remove the chicken from the smoker and let it rest for about 10 minutes before slicing.

Notes

For additional flavor, consider brining the chicken beforehand and using fruit wood for smoking. Allowing the chicken to rest is crucial for flavor retention.
