In a small mixing bowl, combine whipped cream cheese, crème fraîche, chopped dill, minced chives, lemon zest, lemon juice, salt, and pepper. Mix until smooth.
Lightly toast the demi-baguette to enhance its texture.
Spread a generous layer of the herbed cream cheese on both halves of the toasted baguette.
On the bottom half, layer cucumber slices, arugula, smoked salmon, and red onion. Add sprouts if desired.
Top with the other half of the baguette and slice the sandwich in half, if preferred.
