Ingredients
  

Main Ingredients

  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1/2 cup powdered sugar Plus an additional 1/2 cup for rolling.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Spoon and level for accuracy.
  • 1/4 teaspoon salt
  • 1 cup finely chopped nuts (such as walnuts or pecans) Lightly toast for extra flavor if desired.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream the softened butter and 1/2 cup of powdered sugar together until light and fluffy.
  • Stir in the vanilla extract, mixing well.
  • Gradually add the flour and salt, mixing just until combined.
  • Fold in the chopped nuts until evenly distributed throughout the dough.
  • Scoop out small portions of dough and roll them into balls, about 1 inch in diameter.
  • Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 12 to 15 minutes, or until the bottoms just begin to brown.
  • Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes.
  • While still warm, roll each cookie in the additional powdered sugar until fully coated.
  • Let the cookies cool completely on a wire rack before serving.

Notes

To store, place cookies in an airtight container with parchment paper between layers. They can be frozen for up to three months.
