Ingredients
  

For the Cookie Dough

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda Ensure it is fresh for best results.
  • 1 teaspoon baking powder Ensure it is fresh for best results.
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter, softened Use room temperature for better mixing.
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Cinnamon Filling

  • ½ cup light brown sugar
  • 1 tablespoon ground cinnamon

For Optional Frosting

  • ½ cup powdered sugar Optional for frosting.
  • 1 tablespoon milk Optional for frosting.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • In a bowl, mix the flour, baking soda, baking powder, salt, and ground cinnamon until well combined. Set aside.
  • In a large bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy.
  • Add the egg and vanilla extract to the butter mixture, mixing until everything is well incorporated.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing until you have a soft dough.
  • In a small bowl, combine the light brown sugar and 1 tablespoon of ground cinnamon to create the cinnamon filling.
  • Roll the cookie dough out on a lightly floured surface into a rectangular shape, about ¼ inch thick.
  • Sprinkle the cinnamon filling evenly over the rolled-out dough.
  • Carefully roll the dough into a tight log, starting from one edge to the other.
  • Slice the log into ½ inch thick rounds and place them on the prepared baking sheet, spacing them apart.

Baking

  • Bake for about 10-12 minutes or until the edges begin to turn golden.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Frosting (Optional)

  • If you want to add frosting, whisk the powdered sugar with milk to create a smooth consistency, then drizzle over the cooled cookies.
