Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, combine softened butter, cream cheese, and granulated sugar. Cream together using an electric mixer on medium speed until light and fluffy, about 2 to 3 minutes.
  • Add the eggs, vanilla extract, and almond extract. Mix until fully incorporated.
  • In a separate bowl, whisk together all-purpose flour, corn starch, baking soda, and salt.
  • Gradually add the dry mixture to the wet mixture, mixing gently with a spatula until just combined. Do not over-mix.
  • Cover the bowl with plastic wrap and chill in the refrigerator for 2 hours.

Baking

  • After chilling, roll the dough into small balls (about 1-2 inches in diameter) and coat them generously with sprinkles.
  • Place the dough balls on the prepared baking sheets, leaving about 2 inches of space between each cookie.
  • Bake in the preheated oven for 9 to 12 minutes, until slightly underbaked and glossy in the center.
  • Allow to cool on the baking sheet for 3 to 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, ensure butter and cream cheese are at room temperature before mixing. Chilling the dough is crucial to maintain the cookies' soft texture.
