Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the peanut butter, brown sugar, and granulated sugar. Beat until smooth and creamy.
  • Add in the egg, sourdough starter, baking soda, salt, and vanilla extract. Mix until well combined.

Baking

  • Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them a few inches apart.
  • Gently press each cookie down with a fork to create a crisscross pattern.
  • Bake for 10-12 minutes or until the edges are slightly golden.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
