Main Ingredients

  • 2 cups cooked and shredded chicken Use rotisserie chicken for convenience.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa Choose your favorite variety.
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 cups shredded cheese (cheddar or Mexican blend) Feel free to mix cheese varieties.
  • 1 cup sour cream Can be substituted with Greek yogurt.
  • to taste Tortilla chips (optional for topping) For added crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine cooked and shredded chicken, black beans, corn, salsa, chili powder, and cumin. Mix thoroughly.
  • In a 9x13-inch baking dish, place half of the chicken mixture at the bottom. Dollop half of the sour cream over the chicken and sprinkle half of the shredded cheese on top.
  • Repeat the layers with the remaining chicken mixture, sour cream, and cheese.

Cooking

  • Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden.
  • Let the casserole sit for a few minutes before serving.

Notes
