Ingredients
  

Salad Ingredients

  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or grilled
  • 1 cup black beans, drained and rinsed
  • 1 medium red bell pepper, diced
  • 1 medium avocado, diced
  • ½ cup red onion, finely chopped
  • 1 cup shredded cheese (cheddar or pepper jack)
  • ½ cup cilantro, chopped

Dressing Ingredients

  • 1 small lime, juiced
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • to taste Salt and pepper
  • to drizzle Olive oil

Instructions
 

Preparation

  • Rinse and chop the romaine lettuce into bite-sized pieces.
  • Rinse the cherry tomatoes, then slice them in half.
  • If using canned corn, drain it well.
  • Rinse the black beans under cold water in a strainer to remove excess sodium.
  • Dice the red bell pepper and avocado and finely chop the red onion.
  • In a small bowl, mix the lime juice with cumin, chili powder, salt, and pepper to create a zesty dressing.

Mixing

  • In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, corn, black beans, red bell pepper, avocado, red onion, and shredded cheese.
  • Toss everything together gently to avoid crushing the avocado.
  • Drizzle the lime dressing over the salad and toss again to ensure everything is well-coated.
  • Finally, sprinkle the chopped cilantro on top.

Notes

For added crunch, consider using tortilla strips as a garnish. Offer various dressings on the side like a tangy cilantro-lime vinaigrette or creamy avocado dressing.
