Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1/2 teaspoon allspice
  • 1/4 teaspoon ground cloves

Wet Ingredients

  • 1 1/2 cups light brown sugar (packed)
  • 1/3 cup maple syrup
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk

Add-ins

  • 1/2 cup chopped pecans
  • 1/2 cup raisins

Frosting

  • 12 oz cream cheese (at room temperature)
  • 1/2 cup unsalted butter (at room temperature)
  • 3 1/2 cups powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Add the ground spices: cinnamon, nutmeg, ginger, allspice, and cloves.
  • In another bowl, mix the packed light brown sugar, maple syrup, vegetable oil, and unsweetened applesauce. Blend these ingredients and then add the eggs one by one, stirring in the vanilla extract and buttermilk until smooth.
  • Gradually fold the dry mixture into the wet mixture until just combined. Gently fold in the chopped pecans and raisins.

Baking

  • Divide the batter between the prepared cake pans and bake for 25 to 30 minutes or until a toothpick inserted comes out clean.
  • Let the cakes cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.

Frosting

  • In a mixing bowl, beat the cream cheese and unsalted butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until fluffy.
  • Once the cakes are completely cooled, frost between the layers and on the top and sides of the cake.

Notes
