  • 6 large large eggs Fresh, high-quality eggs recommended
  • 2 tablespoons mayonnaise
  • 1 teaspoon chili garlic sauce Adjust for spiciness
  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar
  • Salt and pepper to taste Add as desired

Preparation

  • Start by placing the large eggs in a pot and cover them with cold water. Ensure the water fully submerges the eggs.
  • Turn on the heat and bring the water to a boil over medium-high heat.
  • Once the water reaches a rolling boil, cover the pot with a lid and remove it from the heat. Allow the eggs to sit for about 12 minutes.
  • Transfer the eggs to a bowl filled with ice water to halt the cooking process.
  • When cool enough to handle, gently peel the eggs under running water.
  • Slice each egg in half lengthwise and place the yolks in a mixing bowl.
  • Mash the yolks until crumbly, then add mayonnaise, chili garlic sauce, soy sauce, rice vinegar, and a sprinkle of salt and pepper.
  • Mix until you achieve a smooth and creamy mixture. Adjust seasoning as desired.
  • Carefully spoon or pipe the yolk mixture back into the egg whites.
  • Garnish with chopped green onions and paprika before serving.
  • Chill in the refrigerator until ready to serve.

Notes

These deviled eggs can be made a day in advance. Store in an airtight container in the refrigerator for freshness. Serve with fresh vegetables or extra chili garlic sauce on the side.
