Main Ingredients

  • 1 pound boneless chicken thighs, cut into bite-sized pieces Opt for thighs for a moist and flavorful experience.
  • 2 tablespoons vegetable oil Used for cooking.
  • 1 tablespoon ginger, minced Adds flavor and aroma.
  • 1 tablespoon garlic, minced Enhances the dish's fragrance.
  • 1 cup broccoli florets Provides crunch and nutrition.
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup snow peas
  • 1 carrot julienned
  • 2-3 green onions, chopped For garnishing.
  • 1/4 cup soy sauce For the sauce.
  • 2 tablespoons chili sauce Adjust for desired spiciness.
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch To thicken the sauce.
  • Salt and pepper, to taste
  • Sesame seeds, for garnish

Instructions
 

Preparation

  • Season the chicken pieces with salt and pepper.

Cooking

  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • Add the chicken to the pan and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, add minced ginger and garlic. Sauté for about 30 seconds until fragrant.
  • Add the red and green bell peppers, broccoli, carrot, and snow peas to the skillet. Stir-fry for about 3-4 minutes or until the vegetables soften but remain crisp.
  • While the vegetables cook, whisk together soy sauce, chili sauce, sesame oil, and cornstarch in a small bowl.
  • Return the cooked chicken to the skillet. Pour the sauce mixture over the chicken and vegetables. Stir until everything is evenly coated and thickened, about 2-3 minutes.
  • Remove from heat and sprinkle with chopped green onions and sesame seeds before serving.

Notes

Serve with steamed rice or lo mein noodles. You can also drizzle some extra chili sauce or serve with sweet chili sauce for dipping for added flavor.
