  • 1 lb boneless and skinless chicken thighs Fresh, high-quality chicken for best flavor
  • 2 tablespoons vegetable or canola oil
  • 1.5 tablespoons Korean chili paste (gochujang)
  • 1 teaspoon Korean red chili powder (gochugaru) Or regular chili powder
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1.5 tablespoons sugar
  • 1 piece ginger (peeled and minced) About 1 inch / 2 cm
  • 3 cloves garlic (minced)
  • Salt To taste

Preparation

  • Slice the boneless and skinless chicken thighs horizontally into thinner pieces.
  • In a large mixing bowl, combine gochujang, gochugaru, sesame oil, soy sauce, sugar, minced ginger, and minced garlic. Whisk until well combined.
  • Add the sliced chicken to the marinade, ensuring each piece is coated. Let marinate for at least 30 minutes, preferably up to two hours.

Cooking

  • Grill the marinated chicken over medium heat until charred, about 6-7 minutes per side, or bake in a preheated oven at 400°F (207°C) for 20 minutes.
  • Serve immediately with your choice of sides.

Notes
