Filling ingredients

  • 1 cup cooked and shredded chicken Cooked beforehand
  • 1 cup cream cheese, softened At room temperature for easier mixing
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup diced jalapeños (fresh or pickled) Adjust heat by leaving seeds in
  • 1/4 cup chopped fresh cilantro For flavor
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Breading and frying

  • 1 cup breadcrumbs More as needed for coating
  • 2 large eggs, beaten
  • Vegetable oil as needed for frying Heat to medium

Instructions
 

Preparation

  • In a large bowl, combine the shredded chicken, cream cheese, shredded Mexican cheese blend, diced jalapeños, chopped cilantro, chili powder, garlic powder, cumin, salt, and black pepper. Mix thoroughly until well combined.
  • Take a small portion of the mixture and roll it into a ball, about the size of a golf ball. Continue shaping until all the balls are formed and place them on a baking sheet.
  • Set up a breading station with breadcrumbs in one shallow dish and beaten eggs in another.

Breading

  • Dip each ball into the egg mixture, ensuring it’s fully coated, then roll it in the breadcrumbs to coat evenly.

Frying

  • Heat vegetable oil in a deep frying pan over medium heat. Carefully add the balls to the hot oil, frying them in batches until golden brown and crispy, about 3-4 minutes per batch.
  • Use a slotted spoon to remove the balls from the oil and let them drain on paper towels.

Notes

For a healthier option, bake at 400°F (200°C) for 20-25 minutes instead of frying. Store leftovers in an airtight container in the refrigerator for up to four days or freeze for up to three months.
