Spicy Miso Chow Mein Noodles

Ingredients
  

Noodles and Base Ingredients

  • 15 ounces chow mein noodles Cooked to al dente
  • 3 tablespoons butter For sautéing
  • 3 cloves minced garlic Freshly minced
  • 2 red Thai chili peppers One whole for the sauce and one finely chopped

Sauce Ingredients

  • 3 tablespoons white miso paste Provides umami flavor
  • 0.75 cup low-fat milk Creamy base
  • 0.75 cup heavy cream For richness
  • 1 tablespoon Sriracha sauce Adjust to taste for heat
  • 2 teaspoons everything bagel seasoning For garnish

Preparation

  • Boil a large pot of water and cook chow mein noodles for 4-5 minutes until al dente. Drain and set aside.

Sauce Preparation

  • In a skillet over medium heat, melt the butter and add minced garlic and one whole Thai chili pepper. Sauté for 1-2 minutes until fragrant.
  • Finely chop the other chili and add it to the skillet. Stir in the white miso paste until well combined.
  • Pour in low-fat milk and heavy cream, and add the Sriracha sauce. Simmer for 3-5 minutes until the sauce thickens.

Combine and Serve

  • Remove the whole chili from the skillet. Add cooked chow mein noodles and toss until coated with the sauce.
  • Serve in dishes and sprinkle everything bagel seasoning on top. Garnish with fresh herbs or extra Sriracha if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of milk or water.
