  • 1 tbsp olive oil
  • 1 lb smoked sausage
  • 1.5 cups diced onion
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 10 oz can Ro-Tel tomatoes and green chiles, Mild
  • 1/2 cup heavy cream
  • 8 oz penne pasta
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup Monterey Jack cheese, shredded
  • 1/3 cup thinly sliced scallions

Cooking

  • Heat one tablespoon of olive oil in an oven-safe skillet over medium-high heat until smoking.
  • Add the smoked sausage and diced onions to the skillet and cook for about four minutes until the onions are tender and lightly browned.
  • Incorporate the minced garlic into the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
  • Pour in the low-sodium chicken broth and the can of Ro-Tel tomatoes and green chiles, followed by the heavy cream.
  • Stir in the penne pasta, salt, and pepper, ensuring everything is well combined. Bring to a boil.
  • Cover the skillet with a lid and reduce heat to medium-low. Let it simmer for about 15 minutes until the pasta is cooked.
  • Remove from heat, stir in half a cup of Monterey Jack cheese until melted, then top with the remaining cheese and scallions.
  • Place the skillet under the broiler for 3-5 minutes until the cheese is golden and bubbly.

Notes

Serve directly from the skillet for a great presentation. Garnish with additional scallions and pair with a side salad or garlic bread.
